Living in Spain I have come across a literal plethora of tapas. This is a light, healthy tapa that goes best with crisp white wines and crusty bread. This recipe is great for experimenting with a variety of different vegetables, spices and vinegars.

Clams and Beans is a delicious seafood dish, trust me! The combination really works and the flavour is amazing. It's often cooked by fishermen along the North & East Spanish coastline. This recipe is starter and also it's perfect like side dish with a whole grilled fish.

This traditional Spanish soup is full of wonderfully fresh flavours and packed with vitamins as all the vegetables are raw. Cool and refreshing, it is the ideal choice for a simple lunch or midsummer supper, with some seeded country-style bread or rolls. Or serve it as a light starter on a warm evening.

An extremely easy take on a sausage and bean stew with a rich smokey flavour. If you prefer, you could use a can of chopped tomatoes and a can of mixed beans in water instead of the baked beans but I actually find the baked beans are tastier, not to mention quicker!

This is an old Spanish recipe for zesty marinated vegetables that can be prepared with fish, poultry or even with sliced, cooked green bananas. I like it best with chicken gizzards.

This recipe can be eaten as a side dish or as a light meal. It's great with a pork chop and some crusty bread. Its origins date back to North Africa and is one of the very popular choices of tapas in Seville's bars.

Excellent side dish or accompaniment to pork chops, chicken breasts or gammon. Try adding a few crushed chilli flakes to spice it up!!

My first recipe here :) I threw this together a couple of days ago, as I found some beautiful fresh Fennel and some stunning fresh chicken legs. The idea was to mix my mothers stunning recipe for Spanish garlic chicken with the fresh fennel and give that a little Italian twist.

This classic Spanish favourite is always enthusiastically welcomed at the dinner table by seafood lovers. This version is packed with colourful red and yellow peppers, asparagus and peas, together with large, succulent tiger prawns and chunks of red mullet. Serve with a green salad for a memorable Mediterranean-style meal.

No trip to Spain would be complete without sampling their famous rice dish, paella. The ingredients vary from region to region, but we've used monkfish, squid and mussels for this version. Serve with crusty bread.
