This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a popular Catalan garlic sauce that goes very well with grilled meat and roasted pepper and aubergine (Escalivada). I have seen many spellings for this (i.e. alioli, aioli...) but the real name is "All i Oli" - from the Catalan for Garlic and Oil - and these 2 are the only ingredients although there are variations and some places add egg to ensure the consistency of the sauce, which with our without egg should look like mayonnaise.

There's a few things that are always better home made, if you have the time, this is one of them. I don't have a blender, it's quicker if you do, but this recipe assumes that you don't. Mayonnaise was invented in Menorca, and is named after the capital city, Mahon. It is best made with the freshest free-range eggs you can get.

Savoury and spicy chorizo made with pork, garlic, vinegar and dried chillies. This is a cheat's chorizo, as there's no need for casings. I just think everything tastes better when it's homemade - try it and see!
