This salad captures the true flavours of Spain. If you can't find fresh mackerel, smoked mackerel is a good alternative.

This is a fairly quick and easy recipe for empanadas. A friend recently gave it to me, and my whole family loved them!!! Just about any kind of fruit, including melon, is fine. Or make the meat filling by using your favourite type of meat. Make one of the fillings or double the pastry and make both!

These biscuits are traditionally served for All Saints Day on 1st November in Catalonia. Pine nuts can be substituted for the chopped almonds. Cocoa powder or drinking chocolate mix can also be added to the mixture to change the taste. And yes, they are supposed to be squishy when you eat them.

A coco is a bit like a pizza. It makes a lovely starter or an easy tapas dish. The toppings can be almost anything you like.

My first recipe here :) I threw this together a couple of days ago, as I found some beautiful fresh Fennel and some stunning fresh chicken legs. The idea was to mix my mothers stunning recipe for Spanish garlic chicken with the fresh fennel and give that a little Italian twist.

These fabulous biscuits come out around the middle of October and are traditionally eaten on All-Saints Day (November 1) in Catalonia, Spain. The traditional ones are made with pine nuts, but you can also find them with almond or coconut.

This recipe originates from Spain. It's simple to prepare, rich and scrumptious. You may use black pepper instead of paprika if you prefer.

Made with whole oranges – simmered until very tender and then finely chopped – and ground almonds, this classic Spanish cake has a moist, light texture and a wonderful fresh flavour.

An easy to make Spanish omelette with eggs, onion and plenty of cheese. You could easily add other vegetables, like potatoes or red pepper.

This is a rustic Spanish, spicy, mince based baked penne pasta dish which is perfect for a no-frills family supper. It has come about through trial and error in an attempt to replicate a dish that I ate in a Spanish farmhouse some 15 years ago. In our family it is simply called THE Pasta Dish. The sauce makes 5 portions and so it becomes economical and quick after you've cooked the batch of sauce.

This is a recipe I made up one CHristmas to use up leftover turkey in an original way, with lots of vegetables to give a hearty and warming feel to the meal without the heaviness of too many calories. The great thing is it can be assembled ahead and reheated when needed, these quantities serve 6 adults, but can easily be altered to accomodate more.
