This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a popular Catalan garlic sauce that goes very well with grilled meat and roasted pepper and aubergine (Escalivada). I have seen many spellings for this (i.e. alioli, aioli...) but the real name is "All i Oli" - from the Catalan for Garlic and Oil - and these 2 are the only ingredients although there are variations and some places add egg to ensure the consistency of the sauce, which with our without egg should look like mayonnaise.

Calimocho, or kalimotxo, is a very popular Spanish cocktail that is served in many bars and prepared by Spanish youth during traditional 'botellon' parties. Calimocho originated in the Basque region of Spain but has spread throughout the entire country and to many other parts of the world. Coca-Cola is the 'authentic' cola for preparing calimocho.

Direct from Spain, this recipe is simple and delicious. For this recipe it is convenient to have a hand mixer with chopping blades, a food processor or a blender. This gazpacho can be garnished with minced vegetables and parsley, or with a little crushed ice.

This is a wonderful recipe for the classic spicy chilled tomato soup. Works great as a starter or as part of a main. Very refreshing on hot days. Keeps, tightly covered, in the freezer up to 3 months.

There's a few things that are always better home made, if you have the time, this is one of them. I don't have a blender, it's quicker if you do, but this recipe assumes that you don't. Mayonnaise was invented in Menorca, and is named after the capital city, Mahon. It is best made with the freshest free-range eggs you can get.

A very typical spanish sangria, with a twist at the end.. I make this for parties and bbqs, I always make a 5 litre bucket it's cheap and very cheerful, always a hit!! It has vodka but the sangria is so fruity that it won't be noticed.

This is a quick, garlicky Mediterranean olive spread. Similar to the French tapenade, but without capers. Excellent served with good crusty bread.
