An extremely easy take on a sausage and bean stew with a rich smokey flavour. If you prefer, you could use a can of chopped tomatoes and a can of mixed beans in water instead of the baked beans but I actually find the baked beans are tastier, not to mention quicker!

I lived in Spain for two years where I was taught the art of making the Paella which originated in Valencia. First and foremost you will need a special paella pan called a paellera or just a paella. Trust me after you taste this you'll be glad you bought the special pan.

This is a great soup to have during cold winter months, although it's wonderful anytime of year! It's loaded with fresh veggies and has a hearty flavour anyone will enjoy! Add additional root veggies like carrots if you like.

My boyfriend christened this and I think it's a pretty accurate description, chorizo, olives, peppers and potatoes always remind me of holidays in Spain. With the addition of the eggs it's almost like an inside out Spanish omlette.
