Smooth and delicious beef and potato curry with peanuts. I created a slow-cooker version of this famous Thai dish. This is easy to cook and does not take much time to prepare. It goes well with a jasmine rice and steamed veggies as a side.

Bursting with flavour, this main-course beef soup is packed with vegetables and noodles. If you can't get fresh lime leaves easily, they are available in jars at some supermarkets. You can eat the noodles, beef and vegetables with chopsticks, then enjoy the soup with a spoon.

The dressing is completely oil-free, so although both the beef and nuts contain fat and the beef is stir-fried in a little oil, the dish is still light on the fat front. Also, no extra salt is needed because of the spicy dressing and saltiness of soy sauce.
