Fragrant, spicy and absolutely delicious Thai chicken soup. I've eaten a bit of Thai, and I think this comes very close. Add noodles if you like with the fresh coriander.

I adapted this recipe from a cooking class I took while I stayed in Bangkok. You can adjust the veggies and spiciness to your personal preference and you can substitute firm tofu for chicken. Serve over jasmine rice. Adjust the amount of chilli garlic paste for spiciness.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

This makes a huge amount but would be great for a Lunar New Year party! It's a delicious Thai-inspired chicken and seaweed soup flavoured with ginger, lime leaves and lemon grass. Garnish with fresh coriander. You can buy tom yum soup paste and karengo at Chinese, Thai or Asian supermarkets.

These are so tasty! You have to try them! Minced chicken seasoned with spring onion, coriander, chilli sauce and lemon juice for a uniquely Thai flavour.

This stir-fry dish is both spicy and aromatic. Add more green curry paste if you dare. Try it with prawns or scallops for a change. Serve with jasmine rice instead of noodles if you prefer.

It is easy to keep the fat content low in a tangy Thai curry as there is no need to pre-fry the ingredients; instead they are simply simmered in light coconut milk and stock with potatoes, peas and tomatoes.

The authentic version of this soup has galanga, lemon grass and kaffir lime leaves. These are available in jars in some supermarkets but this recipe provides a similiar taste without the trouble of difficult to find ingredients.

Here is a modern, lighter version of the traditional Coronation chicken. The familiar curry flavours and vegetables are still present but they have a Southeast Asian flavour, with spicy Thai curry paste and juicy fresh mango pieces added. This is the perfect salad for a refreshing summer lunch, accompanied by toasted naan or pitta bread.
