This is a quick and easy curry made with chicken, courgette, red pepper and carrot. Coconut milk and curry paste make an irresistible sauce. No need to order in, as this dish is ready in about 20 minutes!

The first recipe I properly crafted myself. A little derivative and exceedingly simple, but satisfying nontheless. Ideal as a late supper when you can't be bothered spending much time cooking. This could be served with lime juice, and you could add a little chopped chilli to the rice.

Oven-baked crisps are not only healthier than those that are fried, their flavour is fresher and more concentrated too. Here, thin slices of beetroot and potato are baked in a hot oven to make dippers for a spicy South-east Asian mixture. If possible, slice the vegetables with a mandolin to ensure they are all an even thickness.
