A delicious recipe that substitutes a portobello mushroom for a pizza base. Try using pesto instead of pasta sauce, and experiment with your favourite pizza toppings. An easy supper for one!

Spicy Thai style shrimp. Chicken, pork, beef, calamari, scallops or tofu can easily be substituted for prawns. This makes for a wonderful supper.

The first recipe I properly crafted myself. A little derivative and exceedingly simple, but satisfying nontheless. Ideal as a late supper when you can't be bothered spending much time cooking. This could be served with lime juice, and you could add a little chopped chilli to the rice.

Served on a bed of spinach leaves or lettuce - this refreshing salad is worth a try if you want to make something exciting out of a tin of tuna.

Watercress teams well with eggs and is highly nutritious, providing iron and beta-carotene. The Gruyère cheese supplies plenty of taste without too much fat. Serve with crusty French bread for a well-balanced meal.
