A little parsley adds a hint of freshness and colour to dishes, but when used in quantity its unique flavour can really be appreciated. It also makes a healthy contribution along with the vegetables to this delicious filling for bagels, which is based on creamy reduced-fat soft cheese.

Naan is traditionally made in a brick and clay tandoor oven. It does not brown like other breads. It should be baked only for 60 seconds or less. It will still be white although it may have a couple brown spots like a cooked flour tortilla. Naan should be served immediately after preparing.

Soda bread dough is flattened into a round circle and divided into farls, meaning 4 parts. It is then cooked on a dry griddle or pan. Traditionally this was the quickest way to make soda bread for unexpected guests who drop by for a bit of craic (good fun). It's best eaten fresh with butter and jam but is also delicious fried as part of an Ulster breakfast.

This is a wholemeal version of soda bread, locally called wheaten bread. This is made into a small round loaf and is my favourite type. Very quick and easy to make too! It's delicious with butter and honey or a slice of Chedder and thinly sliced red onion.

This recipe comes from my mother-in-law and she always made them for Passover. These rolls are easy to make, and you can fill them with tuna or salmon or eat them plain! They are delicious!

Naan is an Indian flat bread, traditionally baked on the sides of a clay tandoor oven. The familiar teardrop shape develops when the bread stretches as it hangs inside the oven. This simple recipe produces fabulous naan under the grill – beautifully light and soft. Best of all, they are quick and fun to make.

The word "farl" is Gaelic for four parts. Make these with leftover mashed potatoes and serve hot with a little butter and salt, or fry them alongside soda bread as part of an Ulster Fry-up!
