I'm not a lover of stews but my partner is so I started making this one for him. He loves it so he gets it every two weeks and complains if I suggest making a beef one instead. Also this needs to be made the day before you plan on eating it.

Do not worry about any gristle as it will dissolve into jelly in the long cooking time. Substitute gluten-free or rice flour for a gluten-free dish. Put any leftover wine into small plastic food containers and freeze. It is ready to use, no need to thaw, and no waste of good wine.
