Anyone who truly loves you will love you with garlic breath, too! Chicken is pan seared and then finishes cooking on a bed of garlic cloves. Toss with tagliatelle and herbed tomatoes and onions. Use any cut of chicken you like with this recipe - two pieces per person.

This delicious stew is inspired by my friend from Sierra Leone who often cooks for her family. Many ingredients can be modified. This is kind of a 'whatever is on hand' recipe. You can use a whole chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

Soy sauce and apricot preserves are the base for this tasty glaze, and you can also try orange marmalade for a citrus variation. This dish is a perfect weeknight supper served over a wild rice blend.

Simply combine apricot jam, vinegar, and brown sugar to make the sauce, pour over chicken and bake. Serve with rice and a mixed green salad if desired.

This is a crunchy, wonderfully satisfying salad that is fab with grilled chicken leftover from yesterday's barbecue. The dressing is sweet and sour, mingling brown sugar with soy sauce and rice vinegar. Fried rice noddles add the crunch.

In Asia, there are different kinds of 'noodle soup'. This one is a great comfort food on a cold day, but also light and healthy. Quantities are arbitrary - adjust to own taste. Very important to add the shallots as they give the fragrance and flavour. Instead of egg noodles, sometimes I use macaroni. If you are adventurous, eat with chopped hot chilli pepper or add some dried chilli flakes to make the soup spicy.

A light but tasty pasta dish, with fresh asparagus cooked in stock with sauteed garlic and seasoned chicken.

This dish gets its kick from dried crushed chillies. It's a impressive impromptu supper when you've friends round at the last minute.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

Teenagers especially will love this unusual pie, which layers flour tortillas with diced chicken and red kidney beans in a spicy tomato, sweetcorn and pepper sauce. Serve with a green salad and a side dish of diced avocado sprinkled with lime juice, for a meal with an exciting Mexican flavour.

Bacon-wrapped chicken drumsticks and thighs with baby new potatoes, roasted with onions and herbs - a very delicious and simple dinner. We love dark chicken meat, but you can use chicken breasts if your prefer. My husband loves it.

Rushed? Need an elegant main dish to serve for an important occasion, that doesn't take a lot of preparation or time? This is it. This dish is not only easy and quick, it looks beautiful when served as well. Perfect served with a wild rice blend.

Baked chicken in a slow cooker for busy people! Put the chicken on in the morning, and have golden brown baked chicken for dinner.

This is my take on the classic Waldorf salad, using balsamic vinegar instead of mayonnaise.

These are quesadillas filled with chicken cooked in barbecue sauce, caramelised onions and Cheddar. Serve with plenty of guacamole, soured cream and tomato salsa!

This is a very tasty and easy-to-make Filipino chicken dish made with soy sauce, garlic and vinegar. I can just as easily double or triple the chicken in this recipe to serve guests at a party. Serve over rice with just a little of the sauce (not too much).

Both beautiful in presentation and taste, this salad uses fresh berries in summer (strawberries, blueberries, raspberries or blackberries) and orange slices in winter. Anytime of year, this sophisticated salad will bring rave reviews.

This is an Indian dish, similar to tandoori chicken but not as spicy. Marinate the chicken for at least 2 to 3 hours, giving the flavours a chance to meld - it will definitely be tastier.
