This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This cake came about from an inspired moment when craving almonds. It's absolutely divine and has become an often requested recipe. One warning however, whenever I cook this cake it seems to disappear very quickly so make sure you get a slice. I've said the recipe serves 8 but it serves 6-8 depending on how much cake one likes at any sitting!

This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

Brilliant chef Antony Worrall Thompson has donated to TREE AID a diabetic friendly tree cake. Antony: "Villagers in Africa know all about foraging for food for free in their woodlands. Using the most nutritious of these foods could go a long way to reversing malnutrition. I want people to have fun cooking my tree cake and finding out about TREE AID’s work to help villagers grow important food trees."

Baking fruit brings out its flavour wonderfully, and a stuffing is a simple way of making baked fruit special. Here peaches are filled with a mixture of dried apricots, almonds and amaretti biscuits. This is a luscious copy of a very famous brand name ice cream! All my little monkeys love this one (wink)! For best results, transfer frozen mixture to a plastic freezer container and freeze for at least one hour before serving (if you can keep your kids out of it for that long!).

This is the easiest pesto recipe, using almonds instead of pine nuts. It can be prepared in 2 minutes after you toast the almonds.
