This garlic mayonnaise originates from Provence and is excellent with fish. Serve with grilled salmon, fried cod or baked seabass. Vary the flavour by using olive oils from Greece, France or Italy, but definitely choose an extra virgin olive oil. Ensure you serve it fresh - do not store for more than a few hours.

This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

Delightful soup made with chestnuts toasted in butter, chicken stock, vegetables and Madeira wine. You can substitute Marsala for the Madeira. Serve hot with a spoonful of soured cream and a light sprinkle of cayenne pepper. This soup can be made up to 2 days in advance.
