This salad is fruity, high in fibre and full of flavour. It makes a lovely presentation. Use soya yoghurt to make this dish vegan.

Veggies, beans and cheese sandwiched in tortillas, then fried until golden on both sides. This is a great weeknight supper, ready in a flash - make one quesadilla per person. You can also cut them like a pizza and serve as a starter or party nibble.

This recipe produces a pizza base that is soft and doughy on the inside and slightly crusty on the outside. Cover it with your favourite sauce and toppings to make a delicious pizza.

This is a scrumptious use of leftover Christmas turkey. Serve on little gem leaves, or use to fill sandwiches. Then stand back and enjoy the compliments!

I used to make these for kids packed lunches, they are tasty, quick and easy and freeze well. Also used to do them for picnics and parties.

Quick and easy - you'll never go to the sandwich shop again. This recipe has a decidedly citrus twist, but feel free to embellish however you'd like - add sultanas, peppers, pineapple, nuts, spring onion, etc.

These mini quiches are so quick and easy you could get your little one to help you. They are great for entertaining, for kids' parties and as a snack and also great for school lunch boxes and can be whipped up in no time! If you don't have puff pastry I have made these without and they still come out really good.

I developed this recipe after spending sometime in Fiji where I fell in love with their way of cooking.

Gravlax is salt-cured salmon popular in Scandinavian cuisine. Some, like this one, are made with vodka.

This unusual loaf is made with a mixture of white and wholemeal flours, plus fennel seeds for a subtle, aniseed flavour. The dough is rolled up round a roasted vegetable filling, so when the loaf is sliced there is a colourful spiral running through it. It makes a great addition to a lunchbox – there’s no need to make sandwiches!

I made these when I had my pub, and they were always a hit. I made them in large batches because of the standing time, but have scaled the recipe for home use.

A summery salad of avocado, peppers and prawns. Delicious served on a bed of lettuce or in a pitta.

Wraps are a quick way to roll tasty fillings into a fun-to-eat package. Take a wrap and cut it across into pieces, and you get a bite-sized pinwheel sandwich that is equally at home in a lunchbox as it is on a buffet table.

Succulent barbecued prawns. This makes the perfect summer meal when served with a crisp green salad.

Japanese food tends to be low in fat, and these stylish sushi rolls are no exception. Now that the ingredients are available in supermarkets, it is easy to make them yourself. You must use sushi rice, which is sticky when cooked.

These chickpea burgers are a delicious vegetarian alternative to beefburgers. This recipe makes 12 small or 6 large burgers.
