This is a beautiful dish that's always a hit! This is a layered antipasti plate, so you can cut it in square slices neatly and find all the ingredients in every bite. Add veggies to your liking. Serve with fresh ciabatta or crusty bread. Enjoy!

This salad is fruity, high in fibre and full of flavour. It makes a lovely presentation. Use soya yoghurt to make this dish vegan.

This salad is a kaleidoscope of colour and taste - black beans, sweetcorn, green peppers and tomatoes. Lime juice, garlic and green chilli give it some punch. It can also be used as a dip with tortilla crisps.

This is a scrumptious use of leftover Christmas turkey. Serve on little gem leaves, or use to fill sandwiches. Then stand back and enjoy the compliments!

I like to serve this cool, refreshing raita with my Lamb Tagine, which you can find on this site. Make the salad early in the day and keep in the refrigerator to let the flavours blend and intensify. Add more mint to taste, but do not substitute dried mint; the flavour is just not the same.

Radicchio, fennel, watercress and pecans are tossed with a lovely balsamic vinaigrette. A fabulously different salad that serves a crowd and looks beautiful in a bowl.

If you are a bean aficionado, you'll love this salad. There are butter beans, kidney beans, green beans and pinto beans, along with some crunchy celery and green pepper. This recipe calls for jarred pimentos but you can use jarred red peppers instead. A sweet vinaigrette is stirred in, and then it's chilled for a few hours to let the flavours mingle.

Smoked salmon, tomato and onion make up this refreshing salad. Sometimes the salmon is salty enough; taste it first before adding any salt.

This is fast, healthy and tastes good! We love olives but you might want to add fewer if you prefer.

The best part of this salad is the dressing. Its great on any salad and I prefer using big onions that are strong in flavour. Add a bit of goat cheese for extra flavour.

Delicious mushroom pasta with its flavour delicately enhanced and lightened with mint. Crack some pepper on top and decorate with unused mint leaves before serving warm.
