Chicken stock has almost endless uses, from soup bases and gravies to a rich but low fat flavouring for veggies. The stock freezes will in ice cube trays or bags. After trying homemade stock you will never want the shop-bought kind again.

You'll need a large stockpot for this soup. Parsnip, turnip, leek, carrot, celery, and dill all lend their flavours to this hearty soup made with a whole chicken. Freezes well.

I've made these for years, and it's a great way to use leftover chicken or turkey! If you're not in the mood for tarragon, just use your favourite spices! Prepare a basic crepe recipe in advance. Crepes can be made and frozen up to several weeks ahead of time.

This is a great recipe for parties. I freeze the leftovers; they reheat quite well. The zesty chicken and cooked peppers are a succulent delight when mixed with the melted cheeses. Cut the quesadillas into wedges and serve with soured cream and salsa.

These delicious Japanese-style bites of chicken speared with green pepper and spring onions can be assembled in advance and then grilled just before serving. For the best flavour, leave the chicken to marinate for several hours or overnight, and remember to soak the skewers first so they do not burn under the grill.

This makes a huge amount but would be great for a Lunar New Year party! It's a delicious Thai-inspired chicken and seaweed soup flavoured with ginger, lime leaves and lemon grass. Garnish with fresh coriander. You can buy tom yum soup paste and karengo at Chinese, Thai or Asian supermarkets.

The ultimate winter warmer. Chicken, white wine and a multitude of vegetables simmer until the vegetables are cooked to your liking. Use a half a chicken, a whole small chicken or chicken pieces.

This is an easy way to use up small amounts of leftover chicken, and no one fights over white or dark meat! Just wrap leftover chicken in wonton wrappers and bake until crispy. You can serve them plain or with soy sauce or sweet chilli sauce. You can buy wonton wrappers at Chinese and Asian supermarkets.
