This all butter Madeira is the perfect all purpose cake! Here the cake has been transformed into a classic red telephone box and a Royal Mail postbox, with a street lamp to boot.

This is just like traditional Christmas pudding, but with less fat. The house smells great all day long. It's wonderful served with rum or cranberry sauce.

This relish has a great flavour, especially with the addition of celery. It goes well on leftover turkey in a sandwich on Boxing Day. Chopped nuts can be added if desired.

This recipe is just thrown together but it is really nice. I was a bit sceptical at first because I'm not a mustard lover and even though you can taste it, it's not overpowering it does just blend in with everything else. My kids love em.

I picked 4kg of blackberries the other day from the Walthamstow marshes in London (so much more than back in the country!) and made two batches of jam with 2kg (with and without apples, and froze the rest) this was the best. It has a bit of a Christmasy taste because of the cinnamon and nutmeg.

Tart blackcurrants make an excellent summer teabread that is fruity without being too sweet, while mint adds a fresh, herbal note. If you have a glut of blackcurrants, make a few loaves and freeze for up to 2 months.

This is an Northern Ireland recipe given to me by my mum many years ago! You don't boil the cake, just the ingredients before you bake it.

For my family, Bonfire Night isn't complete without a slice or two of sticky parkin. Let this sit for a few days before serving for best results.

"This idea came from my mum, who has cooked a wickedly moist lemon cake for years. The secret to its success lies in soaking the cake all the way through with the sticky syrup. Finish it off with a stylish icing." -Phil Vickery
