This oddly wonderful combination of ingredients makes a surprisingly different and delicious soup that everyone will enjoy! Serve with a dollop of yoghurt on top and some crusty bread for dipping.

A delicious soup combining the tastes of sweet potatoes, peanuts and tomatoes.

This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery.

This cake came about from an inspired moment when craving almonds. It's absolutely divine and has become an often requested recipe. One warning however, whenever I cook this cake it seems to disappear very quickly so make sure you get a slice. I've said the recipe serves 8 but it serves 6-8 depending on how much cake one likes at any sitting!

This is a tasty and quick side dish. The cook time is just a guideline, feel free to cook this until the green beans are to your liking.

Make this sweet almondy cake when fresh rhubarb is in season. This recipe makes two cakes so you can give one away.

This combination is so good together and it's a great way to get your kids eating fruit. I make this for my daughter's lunch and she loves it.

Packed with flavour and texture, this stuffing is also low in fat and high in fibre and carbohydrate.

This is a light summery pasta salad that I love because the flavours go so well together. Lemon juice and a drizzle of good olive oil finish everything off nicely. It does taste best when chilled for 1 or 2 hours.

For a speedy meal, layer creamy, ripe avocados with sun-dried tomatoes and smother them with a simple lemony sauce to offset their richness, then top with crisped almonds. Serve with crusty bread and a green salad. Delicious!

This is one of my favourite summer salads. Sunflower seeds add texture and are good for you!

In true American style, this club sandwich is piled high, and packs in lots of interesting flavours and textures. Parma ham, fried until crisp, replaces the usual bacon, and mashed avocado the butter. Adding a few leaves to a sandwich is a cunning way to get children to eat their greens.

Baking fruit brings out its flavour wonderfully, and a stuffing is a simple way of making baked fruit special. Here peaches are filled with a mixture of dried apricots, almonds and amaretti biscuits. Many other fruits – nectarines, apples, pears or quinces – can be prepared in the same way, to ring the seasonal changes.

A Greek favourite that makes everyone think you are a master chef, yet it is sooo easy to make!! I taught a Greek friend how to make sticky toffee pud, and she taught me this fabulous recipe.

So simple, but always gets raves! Add leftover steak, poultry or roast beef for a quick supper fix.
