This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

Warm melted brie and sauteed mushrooms are wrapped in a filo triangle. Great for parties! These are time consuming to make, but extremely elegant.

This soufflé is really straightforward. The key is in getting a good thick cheese sauce to start. Make sure everyone is ready to eat as soon as this comes out of the oven cos, as Paul Keating once said, "a soufflé doesn't rise twice":-)

These tasty cheese and crab tarts are my favourite starter to impress guests! Great for Christmas or another special occasion, but you may want to double or triple the recipe.

Classic crème brûlée, though time consuming, is easy to make and sure to impress! If you prefer to eat it cold, you can chill the crème brûlée after grilling it. The top will remain crunchy.

These vegetarian maki rolls are easy to make, and you can add either crabmeat or smoked salmon if you prefer. Serve with soy sauce and wasabi!

A piquant marinade brings out the succulence of duck meat, stir-fried to seal in its juices. Try serving with plain wheat or rice noodles, or rice.

This is a really simple brownie recipe. it has been tried and tested many a time and they certainly dont last very long in the cupboard. I always use chocolate chunks when i bake them however walnuts are just as good, it is just a family preference. these morish gooey chocolate treats are an all year all occasion must bake.

Very rich chocolate mousse over a rich chocolate cake layer and topped with chocolate ganache and chopped nuts. Great for special occasions. This cake takes TIME to make, and TIME to set. It's worth every second of preparation, and is a hit every time!

Classical puff pastry has close to a thousand separate layers of butter and dough. Blitz puff pastry doesn't puff as high, but it sure is easier to make at home!

By making this cheese souffle in ramekins, there is less chance of it deflating!

A smooth, silky, rich and indulgent French-style super chocolaty treat. This is not too sweet and even if over-cooked (which is pretty easy to do) the taste is still fantastic.

Enjoy this light and lemony cheesecake with a deliciously fresh blueberry compote. It's excellent as a summer dessert, especially if you can find wild berries.

This recipe was given to me by a dear friend. It's perfect for a special occasion, and is as good as you'll get from any restaurant. The fillets are topped with a mixture of liver pate and mushrooms and wrapped with puff pastry and served with a red wine sauce!

Here's my recipe for poached salmon bathed in a classic hollandaise sauce. I serve this dish with boiled, cubed sweet potatoes and broccoli.
