This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

Black Sheep Ale reminds me of walking the Yorkshire 3 Peaks last year. They serve 'Black Sheep Pie' along the route and I thought… I can do that. Well maybe anyway. You can do it with any other ale too I suppose, and I used to do something similar with Guinness, but found that it’s got a slightly more bitter aftertaste to it than the Black Sheep.

This recipe is good for the health. Tip: To always have fresh ginger on hand for a recipe, you can freeze it either peeled or unpeeled.

This is the very first recipe I ever made up, and anyone that I've ever made it for has loved it! The preparation takes a while but once the meatballs are made it's just a matter of simmering them in the sauce, stirring gently to make sure the meatballs stay in one piece.

I am not suggesting for a minute that spaghetti carbonara can be a diet food. However, if you are a fan of this creamy, comforting pasta dish and balk at the calories, here's a method that shaves a few off by omitting butter and cream. It's still yummy though!

This soufflé is really straightforward. The key is in getting a good thick cheese sauce to start. Make sure everyone is ready to eat as soon as this comes out of the oven cos, as Paul Keating once said, "a soufflé doesn't rise twice":-)

Chicken pie has always been a favourite of mine. From the cheap frozen ones I ate as a child to this: a creamy version with mushrooms and leeks, topped with puff pastry. I suppose that actually makes it a pot pie, the fact that it just has a pastry topping and no bottom. What's in a name though: it's still delicious.

A little spicy chorizo goes a long way and adds a fabulous flavour to this colourful rice and vegetable dish. Camargue red rice is especially nutritious, with a higher fibre content even than brown rice, and a wonderful nutty texture.
