Nickie, my boss, made this cheesecake and brought it to work. Everyone raved about it and it is to die for! I know of no one who does not like it, although it may not be so beautiful to look at.

Warm melted brie and sauteed mushrooms are wrapped in a filo triangle. Great for parties! These are time consuming to make, but extremely elegant.

This soufflé is really straightforward. The key is in getting a good thick cheese sauce to start. Make sure everyone is ready to eat as soon as this comes out of the oven cos, as Paul Keating once said, "a soufflé doesn't rise twice":-)

The only tricky part of this recipe is working with filo pastry, but once you get used to it - it's easy. Sometimes you get a batch of filo that rips and tears, so I always buy an extra just in case. I usually freeze these before baking. Just add a few minutes to the cooking time if you are cooking them from frozen. I have also doubled this recipe for large parties.

A majestic orange flavoured cheesecake swirled with chocolate goodness. Orange liqueur may be substituted for the orange juice in equal amounts. These cheesecake not only looks fabulous, but the flavour will send you to cheesecake heaven.

It's as easy as 1, 2, 3 to make these puffs! Just measure, mix and bake. A few spoonfuls of Parmesan adds a big boost of flavour, so no one will ever guess you've cut back on the fat.
