This dish melts in your mouth. The credit goes to my future mother-in-law. Not only does it taste gorgeous, but halibut is a sustainably sourced fish. Each halibut fillet should be approximately an inch thick. Substitute crème fraîche for the double cream for a lighter dish.

This recipe is a family favourite which I often make for dinner parties and Christmas. Its crunchy meringue outside and fluffly centre make the perfect combination. Top with fresh fruit and whipped cream.

I adored black forest gateaux in the 70s and loved trifle so decided I would fuse the two. You can make it all from scratch but also easy to substitute ready made goods if you don't have the inclination. The ingredients are split to enable you to decide at each 'layer'.

I first made this in my A-level Home Economics class - sometimes I get a craving to make it again. Usually in the summer! It's a very smooth solid dessert. I like to make it in individual ramekins and serve with fresh raspberries and cream. I buy the seaweed in a health shop in Donegal.

This is a very moist and light carrot muffin. It's not too sweet and not greasy like other carrot muffins/cakes. The white chocolate cream cheese icing adds just enough sweetness to round it off.

This Scottish favourite is sure to please! This tastes just like the one you had as a child! Butter tablet is creamier crumbly fudge that is absolutely delicious! It may sound as though there is a lot of ingredients and you may think it might be tricky but it’s so easy and so tasty! I hope that you enjoy my recipe as much as I do! It melts in your mouth and is crumbly but not too hard at the same time, TRY IT! It’s lovely!

Classic crème brûlée, though time consuming, is easy to make and sure to impress! If you prefer to eat it cold, you can chill the crème brûlée after grilling it. The top will remain crunchy.

This New York cheesecake recipe rivals the best! It uses amaretto instead of a lemon flavour and is VERY rich. It has no biscuit base to compete with its decadent flavour. Serves 16 lucky people and is best served with fresh sliced fruit or berries and fresh whipped cream.

This is a great recipe for falafel. Everyone that I have made it for loves it. Delicious served with cucumber sauce in a pitta with tomatoes.

This is a traditional Indian dessert. Spongy milky balls soaked in rose scented syrup. Delicious with fresh cream, Kulfi, ice cream etc. To make it even more fancy, sprinkle gold-leaf on top of each serving.

This is a great sweet we have here in Scotland. It is a complete sugar rush. It may be too sweet for some people but I love it. Try it anyway and see what you think. Kids will love it!
