Andrea: "I am delighted to use my cake to promote TREE AID's work with villagers in Africa. Brilliant chef Antony Worrall Thompson has donated to TREE AID a diabetic friendly tree cake. Antony: "Villagers in Africa know all about foraging for food for free in their woodlands. Using the most nutritious of these foods could go a long way to reversing malnutrition. I want people to have fun cooking my tree cake and finding out about TREE AID’s work to help villagers grow important food trees."

This recipe is a family favourite which I often make for dinner parties and Christmas. Its crunchy meringue outside and fluffly centre make the perfect combination. Top with fresh fruit and whipped cream.

I picked 4kg of blackberries the other day from the Walthamstow marshes in London (so much more than back in the country!) and made two batches of jam with 2kg (with and without apples, and froze the rest) this was the best. It has a bit of a Christmasy taste because of the cinnamon and nutmeg.

My mother-in-law gave me this recipe. My family puts it on anything from pancakes to vanilla ice cream. It is best served warm, right after making. Fresh blueberries are recommended.

Stewed figs are thickened with sugar and eggs, then spooned onto a pastry case and topped with meringue. The figs need to be soaked overnight, so plan ahead!
