This is an adapted family recipe. It is a lot of work, but worth the effort. If you do not have a slow cooker, you can bake the ribs for 2 to 3 hours, covered, in the oven.

Choose large oranges that are heavy for their size; they are the juiciest.

This is an Indian dish, similar to tandoori chicken but not as spicy. Marinate the chicken for at least 2 to 3 hours, giving the flavours a chance to meld - it will definitely be tastier.

Two day BBQ ribs, but worth the effort. Baked and marinated with a rub overnight, then barbecued with BBQ sauce.

Cooked on a barbecue, this lamb gives you one and a half to two hours to enjoy your favourite drink while basting.

A whole chicken is seasoned and slowly cooked on the barbecue. The cooking method is a bit unorthodox, but the end result is moist, flavourful and amazing. All you'll need is some chicken, butter, beer and seasonings.

Chargrilled beef is served with crisp lettuce, cucumber and cherry tomatoes dressed in a Thai-inspired dressing. Fantastic summertime food.

These make a lovely change for a summer barbecue party and can be marinated in advance. Serve with lemon wedges and steamed basmati rice.

Inspired by the Korean beef ribs my grandfather always made for special occasions. Have your butcher trim, split, and debone a whole leg of lamb for you. Make the marinade (which is also good on ribs, steak or pork) and marinate overnight. Barbecue the meat to desired doneness. Slice to serve. We like it wrapped in flour tortillas or pitta with chopped lettuce.

With global warming meaning that sometimes you can eat al fresco as early as Easter these days, I've come up with a way to enjoy your easter meal outdoors. I've not indicated measures for the marinade, as this can be modified to taste!

Moist, luscious and delicious. Just the right blend of spices make this tandoori chicken one of my most requested. Great hot or cold. If using thighs with skin, you can put over direct medium heat for the last few minutes to crisp skin.

BBQ ribs barbecued and then baked in a delicious glaze of treacle, honey and ketchup.

Thai flavours combine to make one phenomenal steak! It's great with grilled vegetables, and perfect for salads and sandwiches.

Brown sugar on pork give these luscious skewers their tasty crunch. The fish sauce, now more widely available in shops, is definitely essential to achieve that Vietnamese flavour. The marinade should be enough for up to four steaks.

Zesty and easy peasy, lovely for hot summer bbq's. Replace fizzy orange in marinade with diet variety for a low-cal slimming option.
