My dad used to cook this at parties and it was quite famous. Sadly he died a couple of years ago so now I carry on the tradition. It is nice served with loads of mango chutney and it can be cooked in the oven if it's raining : (

The fresh tomato and lime juice in the salsa balance the richness of the tuna, which can be served hot or chilled. Try serving with sprouting broccoli.

Sea bass, pollock or any firm-fleshed fish may be used. You can grill or barbecue the fish. It's terrific with the fresh salsa, sweetcorn and margaritas on those hot summer nights.
