This easy, flavourful recipe for chicken can be prepared on the grill or the barbeque. It is best served with crusty bread or microwaved ‘baked’ potatoes and salad, but it is also good cold.

Because the flavour of chicken is quite mild, it benefits from a tasty baste when barbecued or grilled, and this also helps to keep the outside from burning until the chicken is cooked through – especially when cooking over charcoal. This recipe is for a spicy Jamaican jerk baste, and there are four more deliciously different ideas.

These colourful grilled vegetables, topped with a fresh tomato and basil salsa and creamy Camembert cheese, make a wonderful vegetarian main course. The vegetables could also be cooked, all at the same time, on a barbecue. Enjoy with toasted ciabatta slices and a green salad.

Pork has an undeserved reputation for being fatty. Modern breeding and butchery techniques mean that many cuts are now extremely lean.

Sometimes I add fresh or dried chillies to the marinade to spice it up a little. I serve it warm, with shredded lettuce in a tortilla wrap.

These beefburgers are loaded with chillies. Be careful when handling the hot chillies - don't let the oils come in contact with your eyes.

Lamb and feta give these burgers a unique Mediterannean flavour. For an even stronger Greek touch, serve the burgers in large pitta breads with red onion rings, chunky cucumber slices and Greek-style yoghurt or bought tzatziki.

Cooked carrots, summer squash and courgette are stirred into oats, cheese and egg with some stock and soy sauce added for colour and taste - a great alternative to beef burgers. Chill for at least 1 hour, then shape into thick burgers and pan fry, grill or barbecue.

Sun-dried tomatoes, garlic and herbs create a Mediterranean flavour, and a fresh chilli and tomato salsa adds extra zip. Making your own burgers is so worthwhile, as they're much lower in fat than most ready-made burgers, and you can flavour them as you please.

These make mouthwatering starters or are good for a party. They can also be served as part of a main course. Everyone always asks me for the recipe when I make them!

Hamburgers are always popular for casual meals, but can be high in saturated fat. This lighter version, made with lean minced pork, is just as flavoursome, and fresh apples and spring onions contribute to your five-a-day. They're delicious spread with sweet chilli sauce. Can also be barbecued.
