These flaky Danish pastries are a time-consuming project, but they're a perfect way to show people how much you love them! I like serving them at special brunches. The puff pastry and almond filling can be made ahead of time, and the pastries can be frozen before baking.

These little bread rings, Jewish in origin, are delicious teamed with savoury fillings such as smoked salmon and a soft cheese, or egg and salad. The double cooking method – first by briefly poaching in boiling water, then baking – gives bagels their unique soft crumb and slightly chewy crust.

I think French toast and bananas are a perfect pair. For a real American-style brunch, garnish with fresh strawberries, a sprinkle of icing sugar and drizzle of maple syrup.

You can cook the pancakes well in advance. The pancake batter can be made up to a day ahead and kept, covered, in the frige. Cooked pancakes can be made up to three days ahead, stacked between sheets of greaseproof paper and wrapped in cling film: store in the frige or freezer. If pancakes are prepared ahead, assemble the whole dish, then bake just before serving. The pancakes are made with half wholemeal flour to be light yet higher in fibre.

They are so delicious - you wouldn't believe that something with prunes could be this good! They're also low in fat, with just about 5 grams per muffin. A great morning or afternoon snack!

A delicious toasted muesli, this is made from a tempting mix of grains, nuts, seeds and colourful red and blue berries. Stirring maple syrup and orange juice into the mix helps to keep the oil content down, making this version much lower in fat than most ready-made ‘crunchy’ cereals.
