Adapted from a dip served at The Elephant Bar Restaurant in Palm Springs California. Altho' some might not think they will like artichokes, I have yet to find anyone who doesn't enjoy this dip. Serve with pitta chips or plain crisps, tortilla chips, crusty bread or anything you might prefer!!

Unlike many aubergine recipes which swim in oil, this one has just enough extra virgin olive oil to enrich and enhance the vegetables in a dish that goes down well with both vegetarians and meat-eaters. This is a great cook-ahead dish, and it is delicious with crusty bread or baked potatoes and salad.

This is easy especially if you live near a good farm shop that sells dates already stuffed with nuts. I've used almonds, pecans and cashews - all work. This is great when you need an appetizer in a hurry. I buy everything at Garsons Farm Shop in Esher.
