I found this recipe whilst looking for inexpensive meals to cook for the family....great hit and costs about a fiver to feed a family of four!!

Traditional Australian recipe, handed down from my mother. Her recipe has coconut and ginger in it which makes these especially good. Originally, these delicious bikkies were lovingly baked and sent in care packages to our soldiers at war.

Make the most of aromatic, golden apricots when they're in season by using them in this attractive tart. It has a sweet orange shortcrust base and is topped with a crumbled flapjack-style mixture of oats, sultanas, hazelnuts and seeds. Serve slightly warm for dessert or with morning coffee or afternoon tea. The recipe for sweet shortcrust pastry is separate. Look in the notes section for how to make orange sweetcrust pastry.

Brown rice, with its nutty taste, takes well to robust additions like wild mushrooms and sun-dried tomatoes. Add some well-flavoured vegetarian cheese too, and a little will go a long way.

A delicious toasted muesli, this is made from a tempting mix of grains, nuts, seeds and colourful red and blue berries. Stirring maple syrup and orange juice into the mix helps to keep the oil content down, making this version much lower in fat than most ready-made ‘crunchy’ cereals.

Halved yellow and red peppers make bright containers for an ultra-easy stuffing of spicy rice and pinto beans, topped with crunchy nuts and well-flavoured cheese. All it needs is a crisp salad to accompany it. Delicious!

This is an easy and attractive vegetarian dish. The rice is cooked in stock, then mixed with peas, asparagus and cheese, and baked in individual dishes. Choose a tangy Cheddar cheese for maximum flavour – a little will go a long way. A tomato and herb salad is a perfect accompaniment for these savoury rice puddings.
