This is a simple way to prepare a turkey without stuffing. The secret ingredient is butter - it enhances the bird's natural flavour. When the turkey is done, the juices may be used to prepare a gravy by adding cornflour 1 tablespoon at a time until the gravy begins to thicken.

This is a delicious and quick way to use up leftover roast turkey or chicken. Serve the creamy turkey over squares of airy puff pastry for something of an improvised pie. Alternatively, serve the turkey over egg noodles or rice.

A small turkey like this is amazingly economical. It will give enough meat for at least 8 portions, or you can serve 4 people and have plenty of leftovers for sandwiches, salads and other dishes. Don't forget to keep the turkey carcass to make stock for soup.

Fresh lasagne, bought or home-made, can be used in a variety of ways, as this recipe illustrates. If making home-made pasta for this dish, try flavouring the dough with fresh coriander or oregano.

This is a recipe I made up one CHristmas to use up leftover turkey in an original way, with lots of vegetables to give a hearty and warming feel to the meal without the heaviness of too many calories. The great thing is it can be assembled ahead and reheated when needed, these quantities serve 6 adults, but can easily be altered to accomodate more.

Having diabetes doesn't mean giving up favourite family meals. Here, lean turkey sausages replace the more traditional pork in a hearty hotpot, with a spicy bean sauce and a covering of thinly sliced root veggies.

Dried chipotle chillies have an aromatic flavour quite unlike regular dried chillies. They make a hot, subtly smoky sauce, which enhances this turkey casserole. Try serving with plain or wholemeal pasta spirals or other shapes.

This warming dish appeals to children and adults alike, so it makes an ideal family meal. It is a good example of an everyday dish in which vegetables, pasta and breadcrumbs extend a modest portion of a protein food, which, being turkey, means the dish is low in fat too. Serve with a salad, and a fruity pudding to follow.
