The best asparagus grows nearest home and reaches you without air miles, for a few short weeks in late May and June. It is so good it demands only the simplest of treatments, and is a natural partner to scrambled eggs.

Cooked asparagus, diced cucumber and spring onion are folded into long-grain rice and chilled. Toss with mustard vinaigrette when ready to serve. A cool spring or summer salad chock-a-block with green veg.

An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

Fluffy white dumplings in a light tomato and vegetable broth make a delicious lunch or supper. The soup can be made in advance, and the dumplings can be shaped and chilled to be simmered just before serving.

Savoury and cheesy. Superb vegetarian dish for dinner parties. You can substitute Pecorino Romano for Parmesan, and porcinis for chanterelles.

There are many versions of Welsh rarebit (or rabbit). The one here is richly flavoured with mature Cheddar cheese and thickened with breadcrumbs to add texture, and is spooned over thinly sliced red onions before being grilled until golden and bubbling. A spinach, apple and celery salad is the perfect partner.
