A wonderful Italian recipe for an uncooked sauce made with fresh garden tomatoes. You don't have to cook a thing except for the pasta!

Simple and delicious steamed artichokes. Serve these with melted butter for dipping. You will need a pot with a steamer insert.

I served this for a party and it was a BIG hit! It tastes better if marinated for at least 24 hours.

This is an adaptation of an old Armenian recipe, and this variation is so delicious I can't stop eating it. It's a great way to stretch expensive seasonal asparagus and pricey cashews. It's great as a side dish or as a vegetarian main.

Cooked asparagus, diced cucumber and spring onion are folded into long-grain rice and chilled. Toss with mustard vinaigrette when ready to serve. A cool spring or summer salad chock-a-block with green veg.

Aubergine adds a lovely flavour and texture to this hearty vegetarian pasta dish that is topped with a crisp layer of breadcrumbs and Parmesan. The rich tomato sauce could be made in advance, then the dish can be quickly assembled and baked when you wish. Serve with a green side salad.

This recipe is for the polenta novice. Two ingredients - polenta and water. So if you can boil water...you can make a delicious pot of polenta every time! There are many options for polenta once it is cooked: you can mix in fresh herbs and cheeses, bake with vegetables, or fry it. Experiment and choose your favourite accompaniment!

This colourful salad is packed with nutrients. Thick wedges of cooked beetroot, thinly sliced apples and orange sections are dressed with a delicious vinaigrette and spooned onto a bed of shredded beetroot greens.

A simple, healthy, summery salad that's easy to prepare. Substitute dried black beans or tinned kidney beans if you can't find tinned black beans.

An easy vegetarian pasta dish that's perfect for a quick weeknight supper. A hearty and delicious tomato, spinach and black bean sauce is served over whole wheat pasta. It's also great served with brown rice, and you can substitute tinned borlotti beans for the black beans.

This is a very plain and simple vegetarian pasta recipe that was born out of the imagination of 3 hungry friends in Brighton, who thougt adding a bit of port in the sauce wouldn't hurt.
