This recipe uses less milk and no thickener whatsoever! Very cheesy, too! You can either serve it from the pot, or top with buttered breadcrumbs and put in a 180 / Gas 4 oven to brown for half an hour, but we like ours fine without.

This is a delicious and simple vegetarian pasta dish. Use your favourite blue cheese -- I always use Danish blue as I'm a lover of strong flavours. Use spinach fettucine if you like!

An autumnal salad to make the most of the squash season. Dorset Blue Vinney adds good, sharp flavour but is lower in fat than most cheeses, making this a healthy dish all round.

There are many versions of Welsh rarebit (or rabbit). The one here is richly flavoured with mature Cheddar cheese and thickened with breadcrumbs to add texture, and is spooned over thinly sliced red onions before being grilled until golden and bubbling. A spinach, apple and celery salad is the perfect partner.

I think this was the first recipe I learnt!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then pop them under the grill. Pure comfort food!

A gorgeously creamy leek soup with a sharp cheese and mustard kick. It makes a delicious lunch served with cheese and onion bread or walnut bread. Plus, it's vegetarian too!

This is an American salad, but it has some of my favourite ingredients: chicken, egg, tomatoes, blue cheese and avocado.

This is a delicious version of the classic with a little more kick! You can substitute the vinegar with lime or lemon juice. Serve with farfalle, or any other pasta shape.

Tempt children to enjoy vegetables with this easy leave-to-cook dish of vegetables and baked beans spiced up with barbecue sauce and with a top layer of melting smoked cheese and sliced potatoes. Delicious!

Vibrant orange and velvety smooth, this intensely flavoured soup is an absolute treat. The sharp flavour of the blue cheese sets off the sweet taste of the soup perfectly.

This is a Greek recipe for prawn saganaki which is great as a starter or meze. It is a delicious dish that I'd only tried in restaurants, but when I tried to make it at home I found that I can make it just as well. Serve with nice crusty bread to mop up all the gorgeous sauce.

Instead of meat, Glamorgan sausages are made with cheese, which, as the Welsh name suggests, should be Caerphilly. Celery has been added for lighter results.

Using shop-bought gnocchi makes this comforting, rustic dish ready in less time than it takes to heat up a ready-made meal. If you're feeling up to it, try making homemade gnocchi, which is more time consuming, but not at all difficult.

Juicy watermelon makes the perfect partner to tangy goat's cheese in this easy-to-assemble pasta salad. Flavour and texture are provided by crunchy endive, peppery rocket and toasted pine nuts, which combine to give a Mediterranean flair.

Potato and leek cakes, flavoured with tasty cheese and fresh herbs, make a satisfying vegetarian meal served with big baked tomatoes and accompanied by a simple leaf salad. Use a floury, main-crop potato, such as King Edward, Desirée or Maris Piper, and mature Cheddar or another hard grating cheese with plenty of flavour.
