One of my favourite dishes when I head back home; it combines hard-boiled eggs with the subtle flavour of anise and the deep brown hues of black tea and soy. The cracked patterns from the broken shells make these quite attractive! I eat these sliced in quarters and chilled as a side dish, starter or snack. Recipe courtesy of Mum.

The classic recipe for pastry cream. Quick and easy. If you wish, substitute 1 teaspoon of vanilla extract for the vanilla bean, adding it after the pastry cream is removed from heat.

This is a Dutch classic and very easy to make. As I love the taste of coffee, I choose to use strong filter coffee for this recipe, but alternatively you can use the same amount of instant coffee. You can also make it low fat by using skimmed or semi-skimmed milk.

Pan bagna is a Mediterranean layered sandwich, often prepared in a hollowed-out round, rustic loaf. Here eggs, anchovies, capers, basil and tomatoes – all ingredients from a classic salade niçoise – are layered in a long French loaf, then left so that the flavours can mingle and soak into the bread. It's a great picnic lunch.

Effortless to prepare using a great storecupboard standby – ready-cooked Puy lentils – this hearty medium-hot curry is a speedy way to feed a hungry family. Delicious with warmed naan and a grated carrot salad. Delicious!

These chicory leaves stuffed with egg mayo make a great nibble or starter. They look pretty too. If you are taking them to a party, the egg-mayo may be made the night before and refrigerated along with washed and dried chicory leaves wrapped in kitchen roll.
