An authentic Thai hot and sour soup. Do not attempt to omit the coriander, as this is essential. Use thai basil instead of regular basil if you can find it. Tom yum paste is hot, so try the soup before adding the chilli and decide if any extra heat is required. You can buy the paste in Asian supermarkets or there's a brand called "Thai taste" at Waitrose. This is well worth the trouble!

For those who really like sweet food, you may also top the pudding off with a drizzle of coconut cream or a mild fruit such as bananas. This is a traditional recipe my friend's mother brought with her from Thailand. Some of the ingredients might be hard to find in areas without Chinese or Asian supermarkets. There are a number of online retailers that carry these ingredients.

This makes a huge amount but would be great for a Lunar New Year party! It's a delicious Thai-inspired chicken and seaweed soup flavoured with ginger, lime leaves and lemon grass. Garnish with fresh coriander. You can buy tom yum soup paste and karengo at Chinese, Thai or Asian supermarkets.

Thai-style seasonings bring piquant flavours to this fast but elegant salad. Succulent roast duck tops a fabulous mix of soft noodles and crunchy bean sprouts, baby corn and pak choi, tossed with chilli. Delicious!

The authentic version of this soup has galanga, lemon grass and kaffir lime leaves. These are available in jars in some supermarkets but this recipe provides a similiar taste without the trouble of difficult to find ingredients.

Bursting with flavour, this main-course beef soup is packed with vegetables and noodles. If you can't get fresh lime leaves easily, they are available in jars at some supermarkets. You can eat the noodles, beef and vegetables with chopsticks, then enjoy the soup with a spoon.

A wonderfully spicy Thai dish. I created this when I fell in love with a dish at a Thai restaurant. It is very good served over jasmine rice.

A satisfying and warming soup that's easy to prepare. I prefer to use the spicy Thai chilli sauce to add flavour rather than the sweet dipping sauce, but either will work.

This is a quick, easy and authentic Thai curry that's sweet and very spicy. I became addicted to the dish at a local restaurant and then worked to duplicate it at home. I think I've got the taste and presentation pegged. I'm estimating on the amounts since I don't measure much when I cook. Feel free to adjust to taste.

You can buy the rice paper spring roll wrappers in Asian shops. These rolls are not fried and taste best dipped in the hoisin peanut sauce. Delicious for a summer party.

Rice noodles, peanut sauce and plenty of prawns make this Asian style dish a perfect cold accompaniment for barbecued meats - or try it warm as a main course! Garnish with some finely chopped peanuts and lime wedges.

The first recipe I properly crafted myself. A little derivative and exceedingly simple, but satisfying nontheless. Ideal as a late supper when you can't be bothered spending much time cooking. This could be served with lime juice, and you could add a little chopped chilli to the rice.
