I bought a similar spread at the supermarket awhile back, and I thought that I could do it better and cheaper myself. I use tinned artichoke hearts, though you can buy fresh artichokes and cook them yourself.

A wonderful, light salsa recipe given to me by a friend who claims she can't cook! Serve with tortilla crisps, or as an accompaniment to chargrilled chicken.

Here is a versatile pasta salad with a twist, using red pepper and broccoli. Perfect for lunch or a picnic. You can easily increase the recipe to feed a larger crowd.

This recipe is aimed at those who don't like any or most of the following ingredients... avocados, tinned pilchards (in brine) or tinned herring fillets (in oil) and stuffed olives. This is because once you try it - you'll love it. As a starter serve on a lettuce leaf with a garnish of finely sliced tomatoes, a lemon wedge or two and a sprig of parsley, accompanied by warmed melba toast. As a snack, put out the bowl with a range of plain and salted crackers.

Green goddess dressing was popular in the 70s - with it's gorgeous mix of flavours, why not start a revival? This is perfect over crisp and mild lettuce leaves, like romaine or little gem.

This is a wonderful, yet simple, guacamole recipe. Perfect when you need nibbles to serve at the last minute. Serve with tortilla chips.

Looking for a refreshing, sweet and spicy salsa for a warm summer evening? This is our favourite. Serve with tortilla crisps. This is also fantastic served on grilled fish. I often use jarred jalapeno chillies instead of fresh.

These little nibbles feature cherry tomatoes stuffed with a cool mixture of mayo, bacon and spring onion. They look great arranged on a platter of rocket.

Pronounced "Basil Roo-ee", this delicious dish is the perfect summer starter. Basil and tomatoes are seasoned with green chilli, garlic and sea salt. Serve with toasted baguette slices or pitta wedges.

I made this as an alternative to tomato sauce for a pizza topping, but I think it was even better the next day as a dip. The amount of ingredients I used only makes about 250ml, so you may want to double or triple the amounts if making for a party.

A classic Latin American dish - the seafood is cooked by the acidity of the lime juice. This is so easy to make, but will impress even the most discerning of guests! Fresh ingredients are a must in this recipe.

This is a very good way of using up scraps of cheese, as well as making a healthy, satisfying snack or lunch.

Chicken livers are so economical, but you'd never know it when you taste this rich and delicious pâté. It feels like the ultimate indulgence, spread on elegant toasts.

Make this chilled summer soup after you've returned from your local market - in other words, use the freshest veg! The chickpeas make it more filling than a classic gazpacho.

This is a cool and refreshing summer soup. Use single cream if you want a lighter version.

Jarred beetroot are great for this recipe, making it ready in minutes. You can save the juice, freeze it and add it in place of the chilled water or ice. Try serving with a dollop of soured cream.

Ruby-red and intensely flavoured, this soup looks stunning swirled with sour cream. Serve as a starter or light lunch with slices of rye bread.

This is a delicious cold summer soup, perfect for a light meal on a hot summer night. Enjoy its distinctive flavour - somewhere between guacamole and gazpacho.

An impressive summertime dinner party starter. Use very ripe tomatoes, good quality olive oil and Parmesan for best flavour.

This is a great party nibble when served with an assortment of crackers.
