Looking for a refreshing, sweet and spicy salsa for a warm summer evening? This is our favourite. Serve with tortilla crisps. This is also fantastic served on grilled fish. I often use jarred jalapeno chillies instead of fresh.

This is a wonderful Mexican-inspired salsa! It is full of black beans, corn, tomatoes and onion. I can never make enough when I have a party. Chill 24 hours before serving if you have time and serve with tortilla crisps.

Speed up the process by using a tin of black eyed beans, if you prefer. This tastes best served at room temperature. It makes a wonderful dip for tortilla crisps, or served on top of toasted ciabatta bread.

This is one of my favourite desserts to make for company in the spring. It’s easy with store-bought sponge cake and it looks like it took hours to prepare with the candied fruit/ricotta filling and green tinted marzipan covering. Some variations use gelato instead of ricotta, but I prefer it best with ricotta.

Coriander and lime juice accentuate the delicate avocado flavour in this refreshing soup. It is simple yet interesting, and ideal for a summer's dinner-party first course or a light lunch. Do not add the avocado too soon – not only will it discolour slightly, but its flavour will mellow and lose the vital freshness.
