This is a wonderful Mexican-inspired salsa! It is full of black beans, corn, tomatoes and onion. I can never make enough when I have a party. Chill 24 hours before serving if you have time and serve with tortilla crisps.

Speed up the process by using a tin of black eyed beans, if you prefer. This tastes best served at room temperature. It makes a wonderful dip for tortilla crisps, or served on top of toasted ciabatta bread.

I made this as an alternative to tomato sauce for a pizza topping, but I think it was even better the next day as a dip. The amount of ingredients I used only makes about 250ml, so you may want to double or triple the amounts if making for a party.

If you are a bean aficionado, you'll love this salad. There are butter beans, kidney beans, green beans and pinto beans, along with some crunchy celery and green pepper. This recipe calls for jarred pimentos but you can use jarred red peppers instead. A sweet vinaigrette is stirred in, and then it's chilled for a few hours to let the flavours mingle.

This is a wonderful recipe for the classic spicy chilled tomato soup. Works great as a starter or as part of a main. Very refreshing on hot days. Keeps, tightly covered, in the freezer up to 3 months.
