No bake cheesecake that is light, but VERY rich! Given to me by a professor to share.

I bought a similar spread at the supermarket awhile back, and I thought that I could do it better and cheaper myself. I use tinned artichoke hearts, though you can buy fresh artichokes and cook them yourself.

This is a light version of a cheesecake served in a glass for easy portioning! Condensed milk will thicken when lime or lemon juice is added – making the filling set perfectly without the need for gelatine!

This is a very good way of using up scraps of cheese, as well as making a healthy, satisfying snack or lunch.

This pretty cake is quick and easy, but still delicious and impressive. It is made by layering a sweetened soft cheese mixture, syrup-dipped sponge fingers and cherry jam.

An impressive summertime dinner party starter. Use very ripe tomatoes, good quality olive oil and Parmesan for best flavour.

I haven't made this yet the measurements will probably have to be changed, hopefully I can come back and change this. The chocolate recipe is from another user here.

Absolutely irresistible, these elegant morsels make perfect pre-dinner canapés. Serve them with drinks before sitting down to the main meal.

Guinness 250 years (1759 - 2009) celebration is today in Ireland. The place where I work has made a special Guinness menu for the day. I am a pastry chef, so I decided to make a Guinness chessecake.

Enjoy this light and lemony cheesecake with a deliciously fresh blueberry compote. It's excellent as a summer dessert, especially if you can find wild berries.

A twist on traditional Black forest cheesecake, with a ginger nut crust and Baileys Irish Cream filling... very easy and always snapped up quickly by guests!

This recipe was passed down to me from my mum. It produces a rich, chocolaty cheesecake perfect for all cheesecake and chocolate lovers alike! Taste a little to ensure that the right amount of chocolate-ness has been reached. If you like cheesecakes a little more chocolaty then you may need to add a little more cocoa powder/water mix to taste.

This easy no-bake cheesecake is creamy, smooth and tangy. Simply leave in the fridge for longer if you prefer a more solid filling. I used homemade lemon curd for the topping (it's very simple to make and absolutely delicious if you don't mind a bit of stirring). I'm sure store bought lemon curd would also be very nice.

This seven-layer salad takes some inspiration from the salads they sell at Boots or M&S (pasta shells and julienned carrots) and some inspiration from my gran (curry powder and brown sugar). This makes a really refreshing, flavourful salad that I simply love and that my friends request at barbecues!
