Velvety asparagus soup, lovely green colour, great with crunchy rolls. My friend gave me this recipe, it originally used chicken stock. When my daughter became vegetarian, I modified it with vegetable stock instead! It also doubles easily. This soup will tempt even asparagus haters!

I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside - simply delicious! It's a dessert that's quick and easy to make, too. Best served warm with vanilla ice cream or natural yogurt.

A very simple microwave sponge pudding in less than 15 minutes with a texture between a sponge and a steamed pudding. Flavour it by adding raspberry jam, treacle or golden syrup to the bottom of the final bowl. Serve hot with custard.

A modification of the traditional potato and cabbage or kale dish, with chunks of potato and a rich cheesiness that my dad exclaims over. Using milk instead of cream makes it healthier.

To speed things up, I cook the veg in the microwave and sometimes use tinned tomatoes. This makes a quick dinner served with rice or naan.

Bhaji is a fry, so do not add water and you will really enjoy the drier variety of an Indian curry. Great with breads like naan or paratha, or with rice and dal.
