This recipe is for making your own liqueur but be patient - it takes a few weeks before you can use it. You will need a wide neck jar for this too. You get the added bonus of some deliciously preserved boozy apricots too. Eat the fruit separately, warmed through and served with brandy snaps and ice cream.

This is a light version of a cheesecake served in a glass for easy portioning! Condensed milk will thicken when lime or lemon juice is added – making the filling set perfectly without the need for gelatine!

Coulis are basically very simple fruit purées, made with raw or cooked fruit, sweetened if necessary. Coulis made with raw fruit will retain more of the vitamin C content, which is otherwise reduced through even the briefest cooking. Almost any soft fruit can be used for an uncooked coulis – kiwi, blackberries, peach, mango and papaya, to name just a few.

Berries are the utterly fresh flavour of summer. Tart, sweet and juicy, they come in a wide array of types, ranging from bright and delicate raspberries to fleshy strawberries, plump little blueberries and rich blackberries. The passion fruit is not a distinctive flavour in this dish, but instead it adds a fragrant tart edge.

I strongly recommend using fresh brambles in this recipe for best flavour. Raspberries, strawberries or a combination of all three may be used, but they should all be fresh.

This recipe is a lovely alternative to the standard sponge trifle at Christmas. It is an attractive layered dessert. This recipe uses a shop-bought Christmas pudding and a tub of premium custard. Christmas cake works well too but it is not as moist.
