This is a cold, garlicky Spanish soup - perfect in summer, especially if you can't make it to Spain. Fresh almonds, just out of their shells, are traditionally used. This version calls for ground almonds, as fresh almonds are hard to come by here.

This is a beautiful dish that's always a hit! This is a layered antipasti plate, so you can cut it in square slices neatly and find all the ingredients in every bite. Add veggies to your liking. Serve with fresh ciabatta or crusty bread. Enjoy!

With a vibrant, deep ruby-red colour and a fresh flavour and texture, raw beetroot is completely different from beetroot pickled in malt vinegar. It makes a spectacular and nutritious salad.

A dip low in fat and calories, but with loads of flavour. Let the dip chill so the consistency thickens and the beans have time to meld with the spices. If you can't find tinned black beans, use dried or a tin of refried beans instead.

A little late in the year to make this with fresh berries, but it does work just as well with frozen if you have any stashed away. The colour is a really deep purple and it tastes great. This would make an ideal homemade Christmas present.

You can make this sweet using salted peanuts too, it will lend a slightly salty bite to it, which is also common in Brazil.

I love pies (my favourite meal is pie and mash!) but I don't like the fat content of the pastry so I came up with this simple but very delicious idea. Use as you would any ordinary pastry or for pasties. All measurements are approximate. If you don't like the hassle of peeling the squash, you can split it in half, take out the seeds and roast it until it's soft (about 30 - 45 minutes).

This unusual salad uses both sweet and tart fruit with cashew nuts to add colour and interest to pretty cauliflower florets, blanched just for a moment to retain their crispness. Roasted cumin seeds and fresh thyme marry the ensemble with their full, delightfully savoury flavours. Serve with a green vegetable or salad and bread.

Daft name, I know. I asked my granny (a retired chef) what they actually were and she said they were a kind of truffle (the choccy sweet, not the fungus). I looked up truffles and they are made from cream, sugar and grated chocolate. They are NOTHING like these. I guess Granny was bluffing. So I am going to stick to the daft name above until someone has a better suggestion.
