I first made this when I worked in a pub in Manchester. Tastes like the best ice cream you ever had and goes down smoothly. Careful, it's stronger than you think! Make sure you add the shots in the right order - if you do it in the wrong order, they may not mix and will look awful.

This is a traditional paste that originated in the Yucatán region of Mexico. It is used in stews or as a rub for meats. Try it on pork, chicken, fish or seafood for a warm, spicy flavour.

Classic Mediterranean dish using black olives, anchovies and capers. This dip is great with toasted pitta bread or crusty bread.

This is a beautiful dish that's always a hit! This is a layered antipasti plate, so you can cut it in square slices neatly and find all the ingredients in every bite. Add veggies to your liking. Serve with fresh ciabatta or crusty bread. Enjoy!

This recipe is for making your own liqueur but be patient - it takes a few weeks before you can use it. You will need a wide neck jar for this too. You get the added bonus of some deliciously preserved boozy apricots too. Eat the fruit separately, warmed through and served with brandy snaps and ice cream.

I bought a similar spread at the supermarket awhile back, and I thought that I could do it better and cheaper myself. I use tinned artichoke hearts, though you can buy fresh artichokes and cook them yourself.

Enjoy these classic Italian toasts with drinks before dinner or as a starter. Using bottled artichokes means you can enjoy them all year round.

A wonderful, light salsa recipe given to me by a friend who claims she can't cook! Serve with tortilla crisps, or as an accompaniment to chargrilled chicken.

Tomatoes, red onion and cucumbers are dressed with olive oil and finished with crumbled feta cheese. It's essential to serve this with good crusty bread.

The richness of this tasty chilled soup is balanced by the sharp injection of lime and hot sauce. An optional glug of Tequila adds an extra kick.

This is a light starter or snack that gets its kick from jalapeno chillies. Finely chop the jalapenos and sprinkle them over the tortillas to taste.

This makes a beautiful presentation for a starter or light weekend lunch. Avocados are filled with a fresh combination of Peppadew™ Sweet Piquanté Peppers and crab meat, tossed in a light dressing and garnished with chives.

Looking for a refreshing, sweet and spicy salsa for a warm summer evening? This is our favourite. Serve with tortilla crisps. This is also fantastic served on grilled fish. I often use jarred jalapeno chillies instead of fresh.

This is a recipe I love to make when having a Mexican fiesta. It is basically a dip, but can also be used as a filling for tacos and tortilla wraps.

A lovely treat at the end of a nice meal or after Christmas dinner! Freshly brewed coffee gets a little added zip from Irish whisky and Baileys.
