This is a tasty brine for any poultry. It will make your bird very juicy, and gravy to die for!! This is enough brine for a 5 to 8kg turkey.

Duck is notoriously fatty, but this method of cooking cuts down drastically on the amount of fat you eat with the meat. For a deliciously healthy meal start with a refreshing salad, then follow with the duck served with spicy or plain rice or noodles and stir-fried mixed vegetables with bean sprouts for extra colour and crunch.

Perk up pork with an overnight spicy-citrus marinade. Lightly toasting the cumin seeds and peppercorns in a dry pan turns up the heat on this full-flavoured roast. Serve with black beans and rice for a true Cuban-inspired meal.

This is the perfect roast turkey recipe. The maple butter adds a touch of sweetness that is just divine, while the apple brandy adds a secret something to the gorgeous gravy. A family favourite! Substitute 2 teaspoons dried marjoram if fresh marjoram is not available.

Inspired by Mediterranean cooking methods, this salad of roasted vegetables has a rich flavour cut by a piquant dressing. It is one of those any-time salads – ideal for a healthy mid-week meal with lots of crusty bread, some pasta or couscous; good as a dinner-party starter; or delicious with grilled fish, poultry or meat.

A perfectly seasoned and juicy turkey. My friend from France taught me to cook turkey like this, but she never measures anything so use your own judgment for vegetable amounts, etc. I usually err on the side of 'more is better'!
