We think of barley as a soup ingredient, but it's also a delicious main-dish grain, served hot or cold. When combined with black beans, tomato and avocado, it adds up to a salad that could hardly be more healthy or delicious.

This salad is a real treat when globe artichokes are in season. The large outer leaves are removed and the succulent, meaty bottom part, or heart, is cooked, then served with fresh crab meat in a lemony dressing.

This piquant salad is a perfect partner for lamb or chicken, or it can be served as an unusual and very tasty starter before a light main course. Scrub the potatoes rather than peel them as many of their vitamins are found just under the skin, and the skin is a valuable source of dietary fibre.
