Fragrant, spicy and absolutely delicious Thai chicken soup. I've eaten a bit of Thai, and I think this comes very close. Add noodles if you like with the fresh coriander.

This delicious stew is inspired by my friend from Sierra Leone who often cooks for her family. Many ingredients can be modified. This is kind of a 'whatever is on hand' recipe. You can use a whole chicken cut into bite-sized pieces, or just breasts and thighs if you prefer. Other suggested additions are turnips, carrots and celery. This looks great served over white rice with a garnish of fresh chopped coriander, parsley or unsalted peanuts.

This oddly wonderful combination of ingredients makes a surprisingly different and delicious soup that everyone will enjoy! Serve with a dollop of yoghurt on top and some crusty bread for dipping.

This is a simple way to cook delicious chicken that all the family will enjoy. You can make the béchamel before you start the rest of the cooking. Cover béchamel with greaseproof paper to stop a skin from forming on top.

Just a plain and simple apple purée to serve with roast pork, or to use as a filling for pastries. Also lovely on top of yoghurt or ice cream.

This is a great dish for using up autumn apples. Bramley, Golden Delicious or Cox's Pippin apples work well.

This recipe is a typical recipe of Southern Italy, precisely the region of Apulia. Spinach and mushrooms are sautéed with onion, garlic, vinegar and white wine. Serve with crusty bread.

This will satisfy even the most demanding curry addict. Lean and tender sirloin steak is quickly cooked with lots of spices, tomatoes, mushrooms and spinach, with yogurt added to give a luxurious feel. Served with cardamom-spiced rice, it makes a really healthy and nutritious meal.

Made from thinly sliced pork fillet, fresh ginger, spring onions and Chinese noodles. It is quick and easy to prepare, and makes a great first course for a dinner party.

For extra flavour, add a splash of rice wine or sake to the soup before serving.

Delicious springtime soup. The crab is optional but I think it makes the soup so great. You can substitute prawns for the crab, if you'd like.

This soup, which is more like a stew, is sustaining enough to make a complete meal if accompanied by some good, crusty bread. The combination of the lamb, spices and the tang of lemon and apricots, has the flavour of North Africa.

Middle Eastern flavours infuse these aubergines filled with a mixture of lamb and rice. Try serving with Moroccan Carrot Dip and Marinated Leeks (on this website).

When our children were little my friend gave me this recipe which hides vegetables in the sauce; my children still love it as teenagers. It freezes very well so I am never without a quick meal to hand. It can be used on its own over pasta or with the addition of single cream makes a luxurious soup. A vegetarian version can be made without the bacon.

The protein-rich seed quinoa teams beautifully with baby mushrooms, leeks and a hint of lemon to make a light and simple meal. Scatter with toasted seeds for extra crunch. Delicious!
