This carnitas recipe makes a lot of food. My neighbours, colleagues, family and friends love it. A must for social occasions. Serve like a burrito with warmed corn tortillas, grated cheese, soured cream and fresh chopped coriander.

Chouriço is simply the Portuguese chorizo. All the better if you can find Portuguese chouriço for this dish, but the more ubiquitous Spanish chorizo will work just fine. Serve over mash or rice.

This recipe has become, hands-down, my favourite ham! This has replaced our Christmas Ham and makes the entire house smell amazing! There is nothing like coming home with this ham cooking! Experiment with the amounts of seasonings to your liking. I prefer more nutmeg but some prefer less nutmeg and more maple syrup!

For this recipe you can use pork pieces also. Note: make up 250ml of stock as you may need to add extra liquid if needed, but the end result should be lovely sticky and melt in the mouth meat with very little sauce left over. I like to serve this with steamed rice and some green veg or a light salad.

I've made it a couple of times now and absolutely love it. It gets better every time! Slow cooking the roasting joint in an oven roasting bag makes the meat so tender! Serve the pork with tortillas.

A wonderful Italian neighbour showed me how to make this recipe after I commented on how good it made the neighbourhood smell when she had her windows open whilst she made it. Cacciatore refers to food prepared 'hunter-style,' with mushrooms, onions, tomatoes, various herbs and sometimes wine. I found adding cheese gave it something special, it also made it mine.
