This is an authentic recipe that originated in the 1800s with Italian fishermen who settled in San Francisco, California. Serve in large bowls with crusty sourdough bread on the side.

Laying a piece of fish on a bed of greens, seasoning with a few aromatics and then sealing up tightly into a parcel is a simple and trouble-free way to cook fish. It's healthy too, as no water-soluble nutrients are lost.

Be transported to the south of France with this dish. Serve with crusty bread, and a nice chilled glass of white wine.

This is a classic recipe that's simple, too. Most of the work is preparing the mussels; cooking takes very little time. Crusty bread is essential for dipping in the buttery wine sauce.

I had a pie in a cafe which had some of the above ingredients and liked it but felt it was a little heave and rich. I have made my own lighter version which is tasty enough to not need any salt, which is good for everyone, not just people with heart problems.

Pick good, fresh and alive mussels for this dish, the fresher the better. This recipe is simply amazing in flavour. You will love it. Serve with a slice of bread.

So simple, but so good - steamed clams served in their own liqueur. Serve with a crusty baguette, or over pasta.

Try stuffing your globe artichokes when they are in season with a mixture of ciabatta, garlic, parsley and Pecorino cheese. You can crisp them up under the grill before serving if you like.
