I love soups especially in the winter. I also love my pressure cooker because it saves time, fuel and nutrients. I was looking for a hearty soup that included leeks and I cast around my kitchen for ingredients. There were plenty of potatoes and leeks so that was my starting point. This is almost a meal in a dish and my family all love it. It is virtually fat freeand low in salt.

Tomatoes and garlic are essential to this dish, which is light, fresh and full of flavour. A perfect preparation for mussels if you like to avoid the cream and butter so prominent in many other recipes.

I had a pie in a cafe which had some of the above ingredients and liked it but felt it was a little heave and rich. I have made my own lighter version which is tasty enough to not need any salt, which is good for everyone, not just people with heart problems.

I received this recipe about 40 years ago from a friend who said it had been in her family for generations. It comes out wonderfully moist and flavourful. I have given it as Christmas gifts many times and it's always very well received.
